Halloween fun with Lindsay Perry
One of our favorite times of the year...Fall & HALLOWEEN! Here's a fun (and yummy) Halloween cookie recipe with Billabong team rider Lindsay Perry. Save some for trick-or-treaters!
Makes about 4 dozen
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 teaspoon vanilla extract
- Preheat oven to 375 degrees F. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets (I used parchment paper).
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
I used store-bought icing and got some fun halloween sprinkles/food color spray for decoration! You can get these at any grocery or craft store. (Michaels Craft supply has a great selection)
The billabong stencil was made by tracing the logo on the plastic tracing paper. (You can use a small sticker or any printer to make the design) — I then used an Exacto Knife to cut away all of the extra material — This can be tedious and may take a couple of tries —
After your cookies cool off, start by applying the icing and putting your cookies in the freezer for about 5 minutes, or so. After your icing becomes firm, gently place the logo on top.
With your spray food coloring (or sprinkles), spray a light coat over the desired section. (It will look really dark but dries a lot lighter in color)
After this step, I decorated my cookies with sprinkles and waited a couple of minutes for them to set. Lastly, pull your stencil off and eat up!!
